Ribolla Gialla DOC 2024 - Plessiva Isidoro Polencic

From the marl and sandstone-rich hills of Collio in Friuli Venezia Giulia, the Polencic family's Ribolla Gialla is a refined expression of this ancient varietal. Grown on stratified “ponca” soils at high-density vineyards (4,500–7,500 vines/ha) using the Guyot training system, the grapes are hand-harvested in mid-September at peak ripeness.

After gentle pressing and a 12-hour cold settling, fermentation occurs slowly in stainless steel tanks at controlled temperatures (16–17°C) over 18–20 days. The wine then matures on its lees for several months with regular bâtonnage, enhancing complexity and texture.

Tasting Notes:
This Ribolla Gialla displays a brilliant canary yellow hue with greenish reflections. The nose is elegant and floral, featuring aromas of white flowers, white rose, and linden, complemented by fruity notes of white peach, golden apple, and citrus. On the palate, it is lively and elegant, with good freshness and acidity. The wine is very dry, exhibiting citrine notes and a slightly bitter finish, maintaining balance and savoriness throughout.

Serving & Pairing:
Serve chilled at 8–10°C. Ideal as an aperitif, it pairs excellently with seafood starters, sautéed vegetables, and flavorful cheeses.
